Judaism is both an ethnicity and a religion, Zionism is tied to both since ethnic Jews (Semites) have an historical tie to Israel and religious Jews have a religious connection to Israel, and other some Jews like your video have no connection to Israel.

Just as with Islam, no one speaks for the Jews. Who do you think speaks for Islam? Do you think the Indonesian Muslims (the largest Muslim nation on the planet recognizes any Muslim leader in the MIddle East as "speaking for them"? The same is true of Jews.

As for Jewish scholars using the Torah, you might enjoy that the Talmud and Mishnah both contain over 400 years of debates between Jewish scholars concerning what the Torah says.
